Assalamualikum brother I Really want to get into the restaurant business And I'm having trouble finding a place where I can learn to cook and do it Without consuming and dealing with haram food and alcohol. I was wondering If you could guide me in the right direction or give me some advise as to what I should do.
My college http://atlantic.edu/aca/index.htm allowed you not to cook pork, I used Hanafi leniency that allowed me to cook with alcohol. The disadvantage is I could not taste my end product.
If you plan to open a restaurant you can work with a certified Chef and you will learn all you need to know w/o the paper.The more you learn behind the line will be to your benefit.
Where do you think I should look for such a chef? A halal Restaurant, some restaurant chain, or maybe a small family run place? I really don't know who would fit that bill. Thank you for all the help May Allah reward you. Inshallah.
There are several things you must learn. Professionalism,urgency and in most restaurants serving hot foods HOT! I can give you a text book that will teach you the history & technique behind all these points,but you will still have to work a kitchen line to gain speed, experience and thick skin.
I don't know how you look or your level of observance,but this will definitely have an effect on where you learn and work. I recommend finding a nice seafood restaurant that has a professional Sou Chef or Exec Chef. Contact the ACF in your area and go to their next meeting www.acfchefs.org tell them you want to learn the trade and are willing to even work for free for the exp. You will get ALOT out of it and learn every station.
If you want to provide a kitchen I would gladly train you,but it would cost you the same as Culinary College & all ing. could be halal. Send me your email and I will send you some pdf Chef handbooks insh'Allah.

Do you have any information about certified culinary school for muslim? I hope that you can help with this matter...thank you....
